Pineapple shrimp fried rice

Here’s a wonderful quick and easy way to have your very own (as we call in the DC metro area) carryout style fried rice. In an attempt to make this meal a little healthy I opted to add a few more veggies than most fried rice meals. My only regret is that I did not have any bean sprouts 😦 However with a recipe this easy, I will ensure to add it the next time I make it…which I’m sure will be very soon.

It only took about :30 tops too !

Ingredients-
1 small bag of rice… I opted for brown rice but any grain will almost due…you can use quinoa as well.
1/2 a bag of frozen peas & carrots
2 spring onions finely chopped
1 piece of celery chopped
1/2 an onion chopped
1 tablespoon of minced garlic
Shrimp (I used 1/2 a bag of frozen deveined)
1/4 of a fresh pineapple chopped into small bits
4 tablespoons of sesame oil
2 eggs scrambled hard
Ginger powder (I didn’t have any and opted for 1 pack of
Celery Salt
Sesame oil
Braggs Amino acid (Braggs is a wonderful and healthy alternative to soy sauce)
Black Pepper
Ginger Honey Crystals…you’re going to want to dilute this in your Braggs Amino & Sesame oil mixture)
*Chicken broth… I didn’t actually use this as I had intended to however you could use it to add to your measuring cup mixture if you’d like for added flavor.

Step 1: Bring two sauce pans of water to boil…one for your frozen peas & carrots and the other for your rice or grain. Allow those to cook until they’re al dente, drain any water off and set them aside.

Step 2: Mix 3 tablespoons of Braggs (or Soy sauce), with 2 tablespoons of sesame oil and 1 packet of Ginger Honey Crystals in a measuring cup. Then set this aside for later use.

Step 3: Finely chop your onion, spring onions & celery.

Step 4: Add 2 tablespoons of sesame oil to your wok on a medium heat. Once your oil is hot place your shrimp in mixing with a wooden spoon, add celery salt & black pepper to taste. Once your shrimp are cooked & pink remove them from the wok & set aside.

Step 5: Cut your pineapple into small pieces. It’s best to use fresh pineapple if it’s in season.

Step 6: Add your onions and celery to your wok and cook on medium heat until translucent. Then add your peas & carrots.

Step 7: Scramble two eggs well, you can use a teaspoon of your preferred oil…I used coconut oil.

Now we’re ready to mix our ingredients together !!!

Step 8: Add your pineapples to your celery, peas & carrots. From there spoon in your rice, eggs and shrimp. Once you’ve allowed your food to mix then add your sesame, Braggs & Ginger Honey Crystal mixture.
