Jay’s Down Home Gumbo so Laissez les bon temps roulez !!!


This past weekend I made a gumbo that I swear was the bomb.com 🙂 I’ve only made gumbo 3 times in my adult life and this time being the third. When I make such a meal I truly go all out. I pull out all the stops and no shortcuts. So, let’s let the good times roll and get down to business !!!

Jay’s Down Home Gumbo



1 large pack of sausage (turkey, chicken, beef or pork kielbasa)

Worcestershire sauce

1 bag of frozen okra

White wine (cooking or drinking 🙂

1 baguette/ french bread

Tabasco sauce (red or green)

1/2 red, yellow orange, and green bell peppers diced

1 whole large sweet yellow onion chopped

1 clove of garlic chopped

1 sprig of scallions chopped

2 large cans of diced tomatoes

2 lbs of crablegs (you can choose to get them steamed…I opted not to)

2 large containers of chicken broth, however you can use bullion cubes and water to make a broth as well.

1 large bag of frozen deveined shrimp

Sea salt

Cracked Pepper


1 bay leaf

1/2 1 stalk of celery chopped


1 tablespoon of olive oil

Italian Seasoning

Smoked Paprika

1/2 a lemon (juice from the lemon you’ll use to put on your shrimp to marinade)


Crab boil seasoning or Old Bay (to season your shrimp)

1 large pack of chicken wings (I used a 12 pack that I cleaned well and cut into portions)

Step 1: Cut your sausage into bite size pieces and put them into a frying pan to saute in 1 tablespoon of olive oil and allow to brown.

Step 2: Chop your veggies, celery bell peppers, garlic and onions into a large pot with a tablespoon of olive oil

Step 3: After you have checked on your sausage, add cooked to pot with veggies.

Step 4: Allow sausage and veggies to simmer for about :10-:15 minutes.

Step 5: Add seasonings to pot and stir well.

(Sea Salt, Cracked Pepper, Cayenne Pepper, Smoked Paprika, Cumin,  a few dashes of Tabasco sauce,Worcestershire sauce and white wine,1 Bay leaf and Cumin)

Step 6: Cut your chicken wings into parts and clean them well with cold water and allow them to sit in a colander on a cookie sheet, plate or cutting board underneath to catch excess water until ready to add to pot.

Step 7: Pour frozen shrimp into a large bowl with cold water to allow to thaw. As shrimp are thawing, remove the tails. Once shrimp is completely thawed, rinse again will with cold water and add lemon juice and shrimp seasoning. You can opt for a crab boil seasoning or old bay. Then cover with saran wrap and place in fridge to allow to marinate for at least an hour.

Step 8 : Remove crab legs from bag, break in half and clean well under running cold water and allow crablegs to sit in sink in a colander until ready for use.

Step 9: Add 1 container or chicken broth and 1 large can of diced tomatoes to large pan and allow to simmer for :15-:20 minutes

Step 10: After having allowed veggies  and sausage to simmer in pot add your wing portions and allow wings to cook for :30-45 minutes in the pot.

Step 11: After having wings cook well, add another container of chicken broth and diced tomatoes and allow to simmer for another :30, then add your cleaned crablegs for the last :30 minutes and add 4-5 small diced red potatoes as well.

Step 12: In your last :15-:20 minutes add your shrimp from the fridge and frozen okra

Step 13: Once you’ve had the opportunity to allow the entire contents of your pot to simmer well, your chicken wings should be falling off the bone, your veggies should be floating around with your sausage and your crablegs should be peaking out of your pot 🙂 I turned my pot up to a medium heat to allow everything to simmer very well. As you’re doing this slice your french bread and place on a cookie sheet in the oven for about :15.

Once you remove them…serve and as I always say ‘Bon Appetite’
