I saw a recipe for a Cauliflower and white bean soup on a ‘Meatless Monday’ blog I follow and I thought it would be tasty to try. With the fall here in full effect here in the Northeast and with the wacky weather from torrential downpours to sunny 70 degree days, I figured why not make a piping pot of soup.
Here a few notes I want to share in advance…Do not begin cooking this soup on a weekday after you have gone to work…this is an all day kind of thing, so save it for the weekend or sometime off from work where you can really allow it to simmer. I made the unfortunate mistake of making my soup as soon as I got home from work one evening and I wasn’t done until midnight…needless to say I went to bed hungry…so don’t do it after work 🙂
Anywho, the recipe calls for just a handful of ingredients most of which you may already have in your pantry or cabinets…if not a quick store run will do ya.
Well, enough of the small chat, here’s the recipe…try it and #BonAppetite !
Jay’s Cauliflower and White Bean soup
1/2 a bag of dried Great Northern Beans
1 head of cauliflower (chopped and cleaned well)
1 package of kielbasa (I used turkey)
1/2 a bag of fresh spinach or mixed greens (like salad mix)
1 chopped clove of garlic
1 knob of ginger (minced)
1/2 an onion (sliced)
a few dashes of cumin, sea salt, pepper and crushed red pepper
2 bay leaves
3 bullion cubes or 2 quarts of chicken broth (add water if needed)
Step 1: Add 1/2 a bag of beans to a pot of h20 and allow beans to soak overnight. Once you’ve done that, place them on medium heat and allow to cook for 2 hours…that is unless you want to use a crock pot.
Step 2: Cut your kielbasa in half and align it on a grill pan, place it in the oven for :40 (:20 on either side at 350 degrees). You’ll want it to have a nice brown color to it. Once your kielbasa is cooked well, cut it into small pieces and set it aside.
Step 3: Add your beans to a large pot.
Step 4: Cut up your onions, garlic and ginger and simmer them well in a skillet with 2 tablespoons of coconut oil until onions are golden brown…add cumin, sea salt, pepper and crushed red pepper.
Step 6: Add your onions, garlic and ginger to your pot.
Step 6: Add your cooked and sliced kielbasa.
Step 5: Cut your cauliflower up after you’ve cleaned it and rinsed it well and add it to your pot of beans.
Step 6: Allow your pot to simmer for about an hour before adding your very last ingredient.
Step 7: Last but not least, add your greens to your pot.
Step 8: Allow all of your ingredients to cook..for hours. I didn’t really time this one but I know it felt like forever, but you can tell once your ingredients begin to soften.
Step 9: Serve and enjoy !
